Smoked Pork Chops Recipe
There are many ways to smoke pork chops. This recipe with fresh herbs and mustard is so simple and pork chops will turn out moist and tender.
Ingredients
6 Center loin pork chops
75 Ml (⅓ cup) grainy Dijon mustard
45 Ml (3 tbsp) honey
30 Ml (2 tbsp) vegetable oil
15 Ml (1 tbsp) red wine vinegar
15 Ml (1 tbsp) chopped fresh herbs such as sage, rosemary and/or thyme
Salt and pepper to taste
Preparation
Preparation:
Trim pork chops of excess fat
Pat dry and place in a glass or ceramic baking dish
Spread the ingredients over the pork chops
Turn pork chops to coat all sides
Let stand
Smoking Method:
Preheat smoker to 90-100°C (190-220°F)
Leave some mustard sauce on the chops
Place on an oiled rack in the upper half of the smoker
Smoke cook for 3 to 4 hours, or until chops are done. Cooking times will vary depending on wind and weather conditions.
Doneness Test:
The pork chops should be moist and tender.
Ready to serve.
Serve with the remaining sauce over the top of the chop.
